Time To Dig A Little Deeper

Alright, so I know I said I was going to take time off from my little blog but I have something on my mind that I thought I should share and hopefully gain some advice from you all. It’s a very simple yet oh so complicated topic. I.stress.easily. very easily. I don’t know why it happens this way but I have always been prone to stress. Even in high school— whether it was a fight with friends or a massive test, I would stress out. In college, it was the same thing. If I had more than two tests in a week, hello stress! For the most part, i would like to think I manage my stress pretty well. I make lists (thank you, mom) and organize things in order of priority. I make my life at least appear to be  simplistic and not-so-stressful. I don’t like to make other people around me feel stressed when I am freaking out internally because that is just not how I work. In my opinion, just because I am stressing out about something doesn’t necessarily mean that someone else is feeling the same way. Being stressed is never fun so bringing someone into that boat when it can be avoided, I say heck yes.

Lately, at work I have been gaining a lot of responsibility. Don’t get me wrong— this.is.fantastic. I have been wanting to take on more for awhile now and all i can think at this very moment is “be careful what you wish for” because it could not be more true. Without going into the entire situation for privacy and my own well-being, you just need to know that I am going to be swamped at work the next few weeks. Many people have asked if I am nervous. The honest answer, yes… how could I not be?! This is my first job in the “real world” and I am still learning (and will continue to for awhile) so yes, it is scary. However, I am so ready to take on the challenge. I feel prepared, to an extent, and I know I am capable. I am more worried about the unknown. You know what I am talking about right? I am organized so I have all my ducks in a row but what about the duck I don’t account for?! That duck scares the crap out me. Who knows when or where its coming from but have no fear, it will come. Something unexpected is expected. And THAT is what I need your help with. Does anyone have advice or some de-stressing routines or steps they like to take? I have the “drinking excessive amounts of wine” covered so that’s a non-issue. What else do you have?!

This.week.is.hectic. Four words that clearly don’t do enough justice. I may be in and out this week with blogging. My career is slowly taking over my life and will be for the next couple of weeks. My plan is to work on the blog in my down time and/or this weekend. I apologize for my slacking lately. I declare this week as time to enjoy a (read: BIG) glass of wine and some quiet time when possible. Err— if only it was possible. I will try my best, don’t you worry!

Take Me With You

After getting back from my NYC getaway I realized that I am in dire need of a travel bag. Not so much a weekend bag as it would be a “put-all-my-random-crap-in” bag. I have never been one of those girls that travel lightly — thank you, mom — and I need a bag that I can carry on the plane or fit easily in the car without a hassle. Now I know this would not be hard to find. However, I have one requirement for this bag. It must.be.organized. I cannot have any more bags that become bottomless pits. Yes, they are great but I already have one that I bring to work. When I travel I need to know where everything is at all times; phone, passport/boarding pass, iPad, magazine, snacks etc. Everything needs a home, if you ask me. Otherwise, it will get lost and go into the black abyss never to be seen again (until I empty my bag once i return home). Pointless, right? Therefore, I need a bag with pockets, zippers, you name it- i need it.

One of my dear friends was recently telling me about how she scored a LO & SONS bag for Christmas. I immediately started giving her the third degree about her bag. How many pockets? Can I fit blah, blah, and blah inside? Is it heavy? What colors does it come in? If i put blah in, can I still fit blah? Is it waterproof? You get the idea. I was extremely intrigued. She continued to rant and rave about how great her bag was and all of it’s amazing compartments. I think at one point she even said “this is the best bag ever created” which I thought was pretty solidifying. Not to mention, the bag looks amazing and oh so classy. They’re price tag is a little hefty ($295) but my LO & SONS gal swears by it and promises it’s worth the price. Does anyone else have one of these bags and can attest to my friend’s review? I would love love loveeee to hear more about the bag… or any other bags for that matter!!! I seriously need help picking one out… and soon! Never know when my next impromptu weekend trip might be!

Weekend Recap: NYC

This past weekend was beyond amazing. New York is such a great place to visit. Keyword: visit. Although it is wonderful, I don’t think I could ever live there. But that is just my personal opinion — clearly there are many people who would agree with me! The fashion was spectacular — hello, Madison Ave — and the food was even better. This was the boyfriend’s first trip to NYC and I think it safe to say he is a fan, as well. Below are a few (read: A TON) pictures to help review this weekend! We started off Saturday at Freedom Tower and some exploring in the city. Saturday night was a hit with seeing The Book of Mormon (hilarious!). Sunday we visited the MET and took a stroll through Central Park followed by a long walk through the city. Monday was short day in the city but we made a quick stop by The Empire State Building to get some beautiful views of the city. Perfect weekend trip if you ask me! I apologize, pictures uploaded in reverse order so just pretend it was on purpose…

This weekend I am off to the Big Apple!!! Cue “Empire State of Mind” by Jay-Z. Every time I am in NYC I have this utter sense of Carrie Bradshaw being injected into me as soon as the plane touches down. New York City is one of those places you can travel to for years and still never see everything. It is a little magical if you ask me. As far as fashion is concerned, anything is possible and everything is acceptable. I haven’t been to the city in a few years so I am super excited to get back. The boyfriend is accompanying me and I could not be more excited (he’s never been!!) to share this experience with him!! I’ll be sure to capture tons of pictures and share them with you when I return! Until next time…

The Good Stuff

Last night I had an impromptu night of cooking with my roommate & friend. We made, you guessed it, stuffed bell peppers. I have always been a fan of stuffed peppers. Something (err— everything) about them is just fantastic. I think it has something to do with the mix & match of meat, vegetables, and rice — all of these make a balanced meal in my mind. Not to mention, I love baking things. Is this weird? I would MUCH rather bake something than an other form of cooking. Its so simple and easy! Okay,  I understand that may have just qualified me as a lazy cook but whatever, the food turns out great and allows my kitchen to remain mess-free. Perfectly good justifications if you ask me. I have used the recipe from Let’s Dish before and once again, it was a complete success. Bon Appetit!

Ingredients
2 tablespoons olive oil, divided
1 pound lean ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 tablespoon taco seasoning
2 cups cooked rice
4-6 red (or green) bell peppers
1 (15 oz.) can black beans, rinsed and drained
1 cup frozen corn, thawed
1 (10 oz.) can diced tomatoes and green chilies
1/2 cup sour cream
1/4 cup chopped fresh cilantro
2 cups shredded cheddar cheese
Salt and pepper, to taste

Directions
Preheat oven to 350 degrees.  Cut the peppers in half lengthwise and remove seeds and ribs.  Coat the pepper halves inside and out with about 1 tablespoon of the olive oil.  Place into a lightly greased baking dish.  In a large saute pan over medium high heat, saute the onion and garlic in remaining olive oil until soft.  Reduce heat to medium and add ground beef; cook until beef is no longer pink .  Stir in taco seasoning.  Add diced tomato and green chilies, corn, beans and sour cream.  Stir and cook until heated through. Remove from heat and stir in cooked rice and cilantro.

Generously fill peppers with meat and rice mixture.  Cover and bake for 30-35 minutes, or until peppers are just tender.  Remove from oven and sprinkle with shredded cheese.  Return to oven, uncovered, for 5-10 minutes more, until cheese is melted and peppers are tender.  Garnish with additional cheese, cilantro, avocado or sour cream, if desired.

* My friend brought over a side salad which included goat cheese (my favorite!!), shaved almonds, apples and a few other goodies. It was delicious!

PS. Can you tell the difference in quality of photos? I used my dad’s camera that I talked about yesterday and I think the pictures are so much better. But I am a nerd and notice these things.
