This weekend I am off to the Big Apple!!! Cue “Empire State of Mind” by Jay-Z. Every time I am in NYC I have this utter sense of Carrie Bradshaw being injected into me as soon as the plane touches down. New York City is one of those places you can travel to for years and still never see everything. It is a little magical if you ask me. As far as fashion is concerned, anything is possible and everything is acceptable. I haven’t been to the city in a few years so I am super excited to get back. The boyfriend is accompanying me and I could not be more excited (he’s never been!!) to share this experience with him!! I’ll be sure to capture tons of pictures and share them with you when I return! Until next time…

The Good Stuff

Last night I had an impromptu night of cooking with my roommate & friend. We made, you guessed it, stuffed bell peppers. I have always been a fan of stuffed peppers. Something (err— everything) about them is just fantastic. I think it has something to do with the mix & match of meat, vegetables, and rice — all of these make a balanced meal in my mind. Not to mention, I love baking things. Is this weird? I would MUCH rather bake something than an other form of cooking. Its so simple and easy! Okay,  I understand that may have just qualified me as a lazy cook but whatever, the food turns out great and allows my kitchen to remain mess-free. Perfectly good justifications if you ask me. I have used the recipe from Let’s Dish before and once again, it was a complete success. Bon Appetit!

Ingredients
2 tablespoons olive oil, divided
1 pound lean ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 tablespoon taco seasoning
2 cups cooked rice
4-6 red (or green) bell peppers
1 (15 oz.) can black beans, rinsed and drained
1 cup frozen corn, thawed
1 (10 oz.) can diced tomatoes and green chilies
1/2 cup sour cream
1/4 cup chopped fresh cilantro
2 cups shredded cheddar cheese
Salt and pepper, to taste

Directions
Preheat oven to 350 degrees.  Cut the peppers in half lengthwise and remove seeds and ribs.  Coat the pepper halves inside and out with about 1 tablespoon of the olive oil.  Place into a lightly greased baking dish.  In a large saute pan over medium high heat, saute the onion and garlic in remaining olive oil until soft.  Reduce heat to medium and add ground beef; cook until beef is no longer pink .  Stir in taco seasoning.  Add diced tomato and green chilies, corn, beans and sour cream.  Stir and cook until heated through. Remove from heat and stir in cooked rice and cilantro.

Generously fill peppers with meat and rice mixture.  Cover and bake for 30-35 minutes, or until peppers are just tender.  Remove from oven and sprinkle with shredded cheese.  Return to oven, uncovered, for 5-10 minutes more, until cheese is melted and peppers are tender.  Garnish with additional cheese, cilantro, avocado or sour cream, if desired.

* My friend brought over a side salad which included goat cheese (my favorite!!), shaved almonds, apples and a few other goodies. It was delicious!

PS. Can you tell the difference in quality of photos? I used my dad’s camera that I talked about yesterday and I think the pictures are so much better. But I am a nerd and notice these things. New Year, New Rule.

If you ask me New Years resolutions are designed for you to fail. I mean realistically, how many of you have actually kept a resolution going for longer than 3 months? Not me — that is for sure. I am just not one of those people that can stay committed to something for that long. I am a phase kind of gal. I go through phases like you wouldn’t believe. My mother can attest to this. Therefore, this year after twenty-two something years of making “resolutions” I have decided that a change (read: rule) is necessary. [Rule #1: This year I will make goals rather than resolutions.] Goals seem much more attainable. After all, I want something that can be accomplished and I will be proud to cross off my list come 2014.

I know I am little behind on posting my “resolutions” but whatever, sue me. Here are a few that I’ve been working on and wanted to share with you:

– find a hobby — I don’t know why this is so hard but it’s been on my mind for awhile. I want to find something I can become passionate about. I am currently borrowing my father’s DSLR camera to see if I want to dive back into photography.
– eat organic — whether I like to admit it or not, I am a health freak. Not so much that my life is consumed by it but being healthy and living well has always sparked an interest. I know eating organic is much better for my body so I figure, why not?
– buy classics, don’t just settle for spontaneous sale items — this is a no-brainer. Saving money and being practical about purchases could never hurt.
– teach the dog a new trick — he is turning 3 in April and I think it’s time he learn something new.
– make an educated decision about the blog— i can officially check off my first goal!! With yesterday marking the day I made a decision to get back into blogging.
– make 5 new friends — i know this may sound odd but I am finally getting settled and Dallas is starting to finally feel like home. However, I love meeting new people and think that it would be great to gain some new friends in Dallas. I’m looking forward to seeing this goal develop!
– volunteer — give back!
– cook a meal at least once a week— so far, so good. On Sunday the boyfriend and I made chili and tonight’s menu includes stuffed bell peppers!
– witness something truly amazing— i am hoping this happens before Summer 2013 but if it doesn’t, I know that come July (my big brother is getting married!) I will have witnessed something wonderful.

These are just a few of the goals I have been working on so far. I have a full page in the back of my new calendar dedicated to these bad boys and I cannot wait to start checking them off! Wish me luck! Does anyone have similar goals? Or different ones that they want to share?!

The Beginning…Again

I’ve been “ignoring” my blog— it’s not really ignoring when I think about it daily— for about 1.5-2 weeks now. I wish i could say I had an excuse (does getting the flu count?) but regardless, I’ve been denying my blog the attention it deserves. Lately, I just haven’t been motivated to write but with 2013 now in full effect, I realized that it is time I make an educated decision about Tasteful {ness}. I am going to try and make a commitment of blogging 3-4 times a week. I want to be able to post every day but I just don’t think I have the time or the material right now. So here is to a brand new start in 2013. Full of good food, lots of fun, and a bunch of tasteful things in the future!! Thanks for sticking around :)

Cue, 2013.

2012. When I look back on the past year it amazes me how much has happened. I graduated from college, I started my first job in the workforce, I took on financial responsibility that I never really thought was possible, I’ve been asked by my wonderful and amazing soon-to-be sister-in-law to be her Maid of Honor, I marked year numero tres in a wonderful relationship with a man I love, and I’ve grown more as an individual than ever before.

This past year has been one for the books without question. Its been full of so many emotions and blessings, not to say there hasn’t been bumps in the road along the way. I don’t think it would have been a memorable year without everything that has occurred. It’s all about what you learn these experiences though, right? Some things I learned over the past year:

+ pay the bill as soon as you get it, don’t delay the inevitable
+ don’t be fooled— dogs are great, vet bills are not
+ family is most important— more of a reassurance seeing as I already knew this
+ best friends are rare, but keep them close when you find them
+ also, no matter the distance between best friends, the good ones will always be there
+ champagne gives the worst hangovers
+ don’t be afraid to over-indulge
+ pay day is always the best day
+ it’s not always about want, instead, focus on need
+
work hard & play hard — balance is key
+ the right song can fix any problem, for a few minutes anyways
+ it’s okay to simply trust your instincts
+ wearing heels from 8am-6pm will never end well
+ anything is possible

Yes, I know — that is just scratching the surface but there was a lot to be learned this year! From graduating to starting a new life in a new city there are many things that I have picked up along the way. 2012 was good to me, to my family, and to my friends. I am blessed to have such amazing people in my life and I am looking forward to everything that 2013 has in store for me. I hope everyone had a wonderful night celebrating the countdown to a new year!

“You don’t have to be rich to sparkle,” how perfect does that describe my night tonight?! I may not be high-rollin’ but I can still put on a sparkly dress paired with some fabulous jewels and have a fantastic night! Whatever you’re doing tonight, staying in or going out… have fun! It’s the end of the year and this is the time to celebrate everything that’s happened over the past year — good or bad. Take a break from worrying and just enjoy yourself… and a few cocktails. Doctor’s orders. I’ll be out in Dallas tonight and I can’t wait for my first NYE in the “Big D!” I feel like I am bound to have a good night, right?? Yes, I think so! Cheers to a great 2012 and even better 2013!!

I decided that the rest of this week is deemed as time off. I haven’t had this long of a break since college and I want to fully enjoy it. All I Want For Christmas Is You…

Merry Christmas Eve!! This is one of my favorite days of the year. “Why?” you ask? Well, we have family holiday traditions that commence today! We spend the day relaxing around the house while preparing for the activities to come in the next day. As the evening rolls around, everyone gets ready for church and the annual Christmas party. One of our family-friends host a holiday party every year on Christmas Eve. It is a great time to catch up with people from my hometown that I normally don’t get the opportunity to see. After the party, we head home to open one present. Each year we get to open one present the night before. I think it is partially because when we were younger we had little-to-no patience. It was the only way to get us to stop asking about what was under the tree. Opening just one present calmed the nerves and allowed us to spread out the holiday cheer of opening presents for just one more day. After presents are open we all go into my dad’s office and read ‘Twas the Night Before Christmas.” Possibly one of my favorite books ever. My momma reads it every year but I remember the one year when I was old enough to read the entire book. Big deal in a child’s life. But now that all of us are old enough and have read books longer than twelve pages, momma continues the tradition of reading the book.

Home for The Holidays!

Tomorrow morning I am waking up bright and early to head home for the holidays! I could not be more excited! I haven’t been home since October and for this home-body, that is a long time. I know what you’re thinking “home-body that moved thousands of miles away? hardly.” But I have to admit, I am very much a home-body. I love my home and my family. Home has always been the equivalent of a happy place for me. Whenever my parents even slightly mention moving out of our house I immediately throw a fit and start laying down any argument possible. I can’t help it — I was born and raised in the same house. There is no other house I want to come home to. No other house would ever be “home” to me. This holiday season after all that has been going on in the world it really makes me appreciate my family that much more. Sure there is guaranteed bickering and chaos with my brothers but that is inevitable. I go home expecting this. But this year, I cannot wait for it all. I love my family so much and I am so blessed to have them. Take me home :)
